Mushrooms with Blue Cheese
Serving Size / Yield
- 12-14 extra lg. mushrooms
- 4 Tbs. butter
- 1/2 C. green onions, finely chopped
- 4 Tbs. fine bread crumbs
- 1/2 C. crumbled blue cheese
Preheat oven to 350 degrees. Rinse mushrooms in cold water, drain and pat dry. Remove stems, trim, chop and save for stuffing. Saute mushroom caps in large skillet with butter, over high heat, for 2-3 minutes. Remove to colander and drain.
Meanwhile, saute chopped stems and green onions in same skillet until tender. Add 2 Tbs. of crumbs, cheese, salt and pepper. Mix well. Arrange mushrooms in shallow baking pan. Stuff mushroom caps with mixture. Sprinkle with remaining crumbs and bake 12 minutes in preheated oven.
