A sophisticated potato dish with a little white wine for flavoring.
2 tsp. butter 1 medium onion, diced 1 tsp. white wine vinegar 1 tsp. sugar 1/4 C. milk 4 medium potatoes, boiled, cooled and sliced Salt and pepper to taste
Melt the butter in the top half of a double boiler. Add the onions and cook until just soft. Add the vinegar and sugar. Add the remaining ingredients, cover and cook until creamy (about 15-20 minutes). Serve warm. If you don't have a double boiler, cook these potatoes over very low heat. Yield: 3-4 servings
