Try something different with sweet potatoes.
4 medium sweet potatoes 1/4 C. milk 2 Tbs. butter 1/4 tsp. salt 1/8 tsp. pepper 1 C. crushed pineapple, drained
Stab potatoes with fork to allow venting. Place in a circle on microwave safe plate. Heat 10-12 minutes, until tender, turning once during cooking. Let stand 5-10 minutes. Cut potatoes in half, lengthwise. Scoop pulp into bowl. Mash well and stir in the remaining ingredients. Spoon mixture into potato skins. Heat 2-4 minutes until heated through. Yield: 8 boats
