The combination of broccoli, chicken and Parmesan makes for a wonderful casserole.
4 Tbs. butter 4 Tbs. flour 2 1/2 C. milk 1 Tbs. sherry 2 C. broccoli, cooked, chopped 8 oz. chicken, cooked, sliced 1/4 C. Parmesan, grated
Melt the butter in a saucepan. Whisk in the flour and cook for 3 minutes. Whisk in the milk. Simmer for 20 minutes. Add the sherry. Set aside. Preheat the oven to 375 degrees. Add the broccoli to a well-oiled casserole dish. Top with the chicken. Pour the sauce over the mixture. Sprinkle on the cheese. Bake for 18-20 minutes or until lightly browned.Yield: 4 servings
