A bite of red onion is perfect in these tiny tea-size sandwiches.
8 slices of thin sandwich bread Mayonnaise 1 small red onion, thinly sliced 1/2 C. fresh parsley, chopped
Spread a small amount of mayonnaise on 4 of the 8 slices of bread, followed by red onion and parsley. Cover with remaining slices of bread, cut into 4 equal parts and serve. Tip: Red onion can sometimes be a little strong. To tone down the onion flavor just a bit, soak the onion slices in cold water for about 15 minutes before making the sandwiches.
