If your kids will eat tuna, this is an excellent dinner to throw together with lost of cheesy goodness.
1 6 oz. can tuna, drained 2 eggs 1 C. small curd cottage cheese 1 C. shredded Monterey Jack cheese 1/4 C. chopped green onions 1/3 C. sour cream 16 oz. noodles or pasta, cooked and drained 1/4 tsp. salt 1/8 tsp. ground black pepper 1/3 C. grated parmesan cheese
Mix all ingredients together except for the parmesan cheese and place into a 2-qt. baking dish. Sprinkle the cheese over the top. Bake at 350 degrees for 45 minutes. Allow to sit for 10 minutes, then serve.
