Lightly-breaded pork is cooked with potatoes, carrots, and onions, and seasoned with a flavorful spice mix.
3 lbs. pork shoulder, cut into cubes 1/4 C. flour 3 tsp. salt 1 tsp. thyme 1 tsp. crushed coriander seed 8 potatoes sliced 1/4" thin 1/4 tsp. pepper 4 onions in rings 2 Tbs. butter 8 carrots cut into 4" sticks 1 lb. can red beans
Trim fat from pork. Shakes pork cubes few at time with flour in sack. Mix spices in cup. Drain liquid from beans in 2 C. measure add boiling water to make 2 cups. Layer half veggies and meat into deep baking dish and sprinkle each layer with seasoning mixture and repeat for second layer. Pour liquid over; dot well with butter, cover. Bake 350° for 3 hrs in oven or in a crockpot all day on low.
