Use up your leftover turkey with this cheesy casserole dish.
1 10 oz. pkg. frozen green beans 2 C. chopped cooked turkey 1 C. 4 oz. Swiss cheese, shredded 1 10 3/4 oz. can cream of chicken soup 1/8 tsp. ground nutmeg 1 C. biscuit mix 1 egg, beaten 1/4 C. butter or margarine, melted 2 Tbs. milk 1 Tbs. fresh parsley, chopped
Cook green beans according to package directions, with no seasonings. Drain. Add turkey, cheese, soup, and nutmeg; stir well. Spoon mixture into a greased 1-1/2 quart casserole dish. Place biscuit mix in a medium bowl. Combine egg, butter, and milk; add to biscuit mix, stirring until just blended. Spoon biscuit mixture around edge of casserole, leaving center open. Sprinkle parsley in center of casserole. Bake at 350 degrees for 25-30 minutes.Yield: 4 servings
