Lemon juice, cider vinegar and cayenne pepper mixed together make for some flavorful kabobs.
1/3 C. lemon juice 1 Tbs. cider vinegar 2 tsp. salt 1/4 tsp. cayenne pepper Garlic, minced 2 boned and skinned chicken breast halves 3 small zucchini 1/2 lb. mushrooms
In a bowl with fork mix lemon, vinegar, salt, cayenne and garlic. Cut each breast in half, then in 3 pieces. Marinate chicken in lemon overnight. Cut zucchini in 2 inch pieces. Place on skewers with chicken and mushrooms and broil 15 minutes, basting.Yield: 2 servings
