Try these grilled sweet potatoes as the perfect side item addition to the Easter feast.
3 lbs. sweet potatoes or yams 1/3 C. margarine or butter, melted 1/3 C. coconut, toasted
Spray grill rack with cooking spray. Heat coals or gas grill for direct heat. Peel sweet potatoes; cut into 1/2-inch diagonal slices. Heat 1 inch of water to boiling in 3-quart saucepan. Add sweet potatoes. Cover and heat to boiling; reduce heat to low. Simmer about 12 minutes or until almost tender; drain. Mix margarine and 1/2 tsp. salt. Grill sweet potato slices uncovered 4 inches from medium heat about 20 minutes, brushing frequently with margarine mixture and turning once. To serve, sprinkle sweet potatoes with coconut. Makes 6 servings
