Made with a stuffing base and American cheese, this beef and broccoli casserole is a no-fail classic.
1- 10 oz. pkg. frozen chopped broccoli 1 1/2 C. cooked rice 1/2 C. chopped onion 1/4 C. margarine 3 Tbs. flour 3/4 tsp. salt 1/8 tsp. pepper 2 1/4 C. milk 1 C. shredded sharp American cheese 2 C. cubed, cooked beef 1 C. herb-seasoned stuffing mix 1/3 C. water
Cook broccoli; drain. Cook onion in 2 Tbs. of the margarine till tender, but not brown. Blend in flour, salt and pepper. Add milk slowly; blending in. Cook and stir till sauce is thickened and bubbly. Add cheese; stir till melted. Stir in cooked rice, broccoli and beef. Put in a 9x13 pan. Melt remaining margarine. Add stuffing mix and water to margarine; toss together. Sprinkle over all. Bake, uncovered 35 - 40 minutes till heated through
