In the mood for a good tasting taco salad? Well here is the recipe for you. It is very nice and simple and not that bad for you either.
1 tsp. olive oil 1 C. diced onions 1 lb. extra (95%) lean ground beef 3 Tbs. Mrs. Dash Southwest Chipotle 10-Minute Marinade 1 bunch romaine lettuce, torn 1/2 C. shredded fat – free cheddar cheese 1 can (15.5 oz.) dark kidney beans, drained and rinsed 2 large tomatoes, diced
Add oil to large saucepan and heat. Add 1/2 C. onions, and cook until soft. Add beef, increase heat and continue to cook for 5 minutes, stirring occasionally, until the meat is no longer pink, and the juices are clear. When beef has cooled, add Mrs. Dash® Southwest Chipotle 10-Minute Marinade. In a clear bowl layer half of lettuce, then ground beef mixture, then layer 1/4 C. cheese. Layer remaining lettuce and beans. Top with diced tomatoes, remaining 1/2 C. onions and remaining cheddar cheese.Yield: 4 Servings.
