Cut down on your sugar consumption and still enjoy a delicious treat with this recipe. Use a brown sugar substitute for a sugar-free version and to reduce calories.
Crust and topping: 1 C. shortening 1/2 tsp. salt 3 C. uncooked oats 2-1/2 C. flour 1/2 C. brown sugar Filling: 2 packages (8 oz.) dates, chopped 1 C. boiling water
Preheat oven to 350 degrees. Mix together shortening, salt, oats, flour and brown sugar. Save 1/3 of the mixture for the topping and press remaining mixture into bottom of lightly greased 9 x 13 pan. Cook datesand water until thick (if too thick, add a little more water). Cool. Spread on top of crust. Sprinkle with remaining 1/3 reserved oat mixture on top. Bake 20 to 30 minutes (they are more chewy at 30 minutes).
