This is an elegant soup that makes a delicious first course to any meal. Cooks all day so you don't have to worry about it.
6 potatoes, peeled and cut into 1" cubes 2 onions, chopped 1 carrot, sliced 1 celery stalk, chopped 4 C. water 1 13 oz. can milk or Half & Half Dash white pepper 1 tsp. cornstarch 1 tsp. flour 2 tsp. salt 2 Tbs. butter Chives, chopped (optional)
Put all the ingredients with the exception of the milk, flour and cornstarch in a pot. Cover and cook on low for 10-12 hours or on high for 3-4 hours. Combine the milk, flour and cornstarch together and add to the pot during the last hour. Serve with chives on top.
