Textures are all mixed up along with flavors of raisins, red grapes, apples, celery and pecans in this curry chicken salad recipe. This would go great on a croissant or in a honey pita.
4 skinless, boneless chicken breast halves - cooked and diced 1 stalk celery, diced 4 green onions, chopped 1 Golden Delicious apple - peeled, cored and diced 1/3 C. golden raisins 1/3 C. seedless green grapes, halved 1/2 C. chopped toasted pecans 1/8 tsp. ground black pepper 1/2 tsp. curry powder 3/4 C. light mayonnaise
In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. It is better served if you wait a day so all the flavors can mix together.Yield: 8 Servings.
