A buttery crust of flour and walnuts is the base of these cheesecake-like cookies. A much better portion size!
1/3 C. butter 1/3 C. brown sugar 1 C. flour 1/2 C. walnuts, finely chopped 1/4 C. sugar 8 oz. pkg. cream cheese 1 egg 2 Tbs. milk 1 Tbs. lemon juice 1/2 tsp. vanilla extract
Cream butter with brown sugar in a small mixing bowl. Add flour and walnuts; blend together. Mixture will be crumbly. Reserve 1 C. for topping. Press remainder of mixture into the bottom of an 8x 8" baking pan. Bake at 350 degrees for 12-15 minutes or until lightly browned. Blend sugar with cream cheese until smooth. Add egg, milk, lemon juice and vanilla; beat well. Spread over baked crust and sprinkle with reserved topping. Bake for 15 minutes. Cool. Cut into 2" squares.
