So sweet and delicious, kids won't realize they're actually eating a vegetable!
3 sweet potatoes 1 1/2 C. sugar 3 large eggs 1/2 stick (1/4 C.) butter 1/2 C. milk 1 3 oz. box instant butterscotch pudding
Boil, drain and mash sweet potatoes. In a large bowl, mix all ingredients well. Place in buttered casserole dish. Bake at 325 degrees until nearly firm in center. Note: You can also bake this in an unbaked 9-inch pie shell.
