This is a quick and easy recipe that even has quick and easy cleanup!
1 C. water 1 C. rice 1 28 oz. jar marinara spaghetti sauce 4-6 pieces boneless, skinless chicken breasts
Bring water to a boil. Turn heat to low and add rice and cook until the water is gone (check box for directions). In a large skillet with lid, heat sauce and chicken together over a medium/low heat, while rice is cooking (sauce can be seasoned to taste if you prefer). Turn sauce and chicken to low, when rice is done, remove chicken from sauce and add rice. Stir to mix. Return chicken to skillet and cover. Finish cooking over low heat until rice is fully cooked. Rice will soak up remainder of sauce, about 1/2 hour. Yield: 4-6 servings From: Carol Howell, Indianapolis, IN
