This recipe calls for onion, tomatoes, green chilies, pepper jack cheese, sour cream with rice and chicken. This is a very easy and splendid meal for dinner time.
4 c cooked white rice 1 can (16 oz.) tomatoes, drained and chopped 1 small onion, chopped 2 C. cooked chicken, in bite-size pieces Salt/pepper to taste 1 C. sour cream 1 can (7 oz.) whole green chilies, seeded and cut in strips 3 c shredded jack cheese 1 can (2-1/4 oz.) sliced ripe olives, drained
In large bowl, combine the rice, tomatoes, onion and chicken. Season with salt and pepper. Spoon half of the mixture in an even layer in a greased shallow 2-1/2 quart casserole. Cover the half of the sour cream, half the chili strips, half the cheese and all the olives. Repeat layering with remaining chicken mixture, sour cream, chilies and cheese. This much can be done ahead; cover and chill as long as 24 hours. Bake, uncovered, in a 350 degree oven for 45 minutes (1 hour if chilled), or until hot throughout. Let stand 10 minutes before serving. Makes 6-8 servings.
