The brown rice adds fiber to an easy and kid-friendly meal.
3 C. cooked brown rice 1 (10-oz.) pkg. frozen tiny green peas 2 C. cooked chopped chicken breast 1/2 C. low-fat mayonnaise 1/2 C. reduced-fat sour cream 1/3 C. toasted slivered almonds 2 tsp. light soy sauce 1/2 tsp. pepper 1/2 tsp. garlic powder 1/2 tsp. dried tarragon
Heat oven to 350 degrees. Coat a 3-qt. baking dish with cooking spray. In a large bowl, combine cooked rice, peas, chicken, mayonnaise, sour cream, almonds, soy sauce, pepper, garlic powder and tarragon. Spoon into baking dish. Cover; bake 15 to 20 minutes or until hot throughout. Makes 6 servings. Susan Nicholson
