An easy casserole dish for those busy dinner nights.
1 lb. lean ground beef 1 1/2 C. chopped onions 1/2 tsp. salt 1/4 tsp. pepper 1 C. shredded Cheddar cheese 3/4 C. biscuit baking mix 3 eggs 1 1/2 C. milk
Cook beef, onion, salt and pepper in large skillet until meat is done and onion is soft. Drain off fat and pour meat into a 10 inch glass pie plate which has been sprayed with cooking oil; set aside. Combine in blender Cheddar cheese, biscuit mix, eggs and milk; blend until smooth. Pour over meat mixture. Bake in 400 degree oven for 30 minutes. Let stand for 5 minutes before serving. Yield: 4-5 servings
