Ingredients

Squash
Butter
Chives
Pepper
Garlic Salt

Directions

Just like a potato, pierce the skin of the squash with a fork or knife to well ventilate. Put on a plate and microwave on high according to the size of the squash, turning over about every 2-3 minutes. (I used a small butternut squash and it took about 7 1/2 minutes to fully cook. Add more time for larger squash.)

Once fully cooked, carefully slice open and scoop out any of the pulp and seeds you don't wish to eat. (If you slice it open and discover it's not done yet, just return to cooking in the microwave.) Next, mash the squash down like a baked potato and top with butter, chives, pepper and garlic salt for a special treat.
