Simple to do, very tasty, low in calories too.
1 pkg. (16 oz.) silken soft tofu 1 C. soy milk (plain, or vanilla) 1/2 C. vegetable oil 1 C. sugar 1/4 C. cocoa 1 Tbs. vanilla 1/8 tsp. salt
Blend all the ingredients with an electric mixer until smooth and creamy. Use a home ice cream maker to freeze the blended ingredients, following instructions for ice cream. Yield: 8 C. Per cup: 307 calories, 18.7 g fat (2.5 g sat fat), 0 mg cholesterol, 44 mg sodium, 295 g carbohydrate, 8.8 g protein (8.2 g soy protein), 1.8 g dietary fiber.
