Add some fresh garlic cloves and lemon to your shrimp to make the best shrimp scampi around.
2 lb. large raw shrimp 1/2 C. (1 stick) butter 1 tsp. salt 6 cloves garlic, crushed 1/4 C. chopped parsley 2 tsp. grated lemon peel 6 lemon wedges 2 Tbs. lemon juice
Remove shells from shrimp, leaving shell on tail section only. Wash under running water and drain on paper towels. Melt butter in 13x9x2-inch baking dish in oven. Add salt, garlic and 1 tablespoon parsley, mix well. Arrange shrimp in single layer in baking dish. Bake at 400 degrees uncovered for 5 minutes.Turn shrimp, sprinkle with lemon peel, lemon juice and remaining parsley. Bake at 400 degrees for 8 to 10 minutes or just until tender.Arrange shrimp on a heated serving platter. Pour garlic butter over all. Serve over rice and garnish with lemon wedges.
