Breakfast or dessert? This cake serves either purpose equally well.
2 1/4 C. flour 1 tsp. salt 2 tsp. cinnamon 3/4 C. brown sugar 3/4 C. sugar 3/4 C. vegetable oil 1 egg, at room temperature 1 tsp. baking soda 1 tsp. baking powder 1/2 C. molasses 3/4 C. buttermilk, at room temperature 1-1/2 C. chopped tart apple 1/3 C. quick-cooking oats 1/2 C. chopped walnuts
Preheat oven to 350 degrees. Grease a 13 inch by 9 inch baking pan. In a large mixing bowl, combine flour, salt, 1 tsp. cinnamon, brown sugar, and granulated sugar; mix well. Remove 1/4 C. of mixture; set aside for topping. To the remainder, add 1/2 tsp. cinnamon, oil, egg, baking soda, baking powder, molasses, buttermilk, and apple. Mix well. Pour into baking dish. To the reserved 1/4 C. topping, add 1/2 tsp. cinnamon, oatmeal, and nuts. Stir to combine; sprinkle evenly over batter. Bake 30 minutes, until a tester inserted in the center comes out clean.
