Ingredients

1 (15 oz) can whole kernel corn, drained
2 (15 oz) cans black-eyed peas, drained
1 (10 oz) can diced tomatoes with green chilies (I use Ro-Tel hot)
2 C. chopped red bell pepper ( green works too)
½ C. chopped onion
½ - 1 C. chopped fresh jalapeno (this gives it a kick!)
1 (8oz) bottle Italian dressing (I use the Robusto Italian)
1 (4oz) jar chopped pimentos

Directions

In a large bowl, combine all of the ingredients and stir gently to combine. Refrigerate overnight. Serve with corn chips.
