This family recipe for walnut cookies has been pasted down for years and it is still as good as they were years and years ago.
2 C. all purpose flour - sifted 2 C. walnuts - finely chopped 4 tsp. baking powder; sifted with the flour 1 C. egg substitute 1 C. sugar 2/3 C. brown sugar 1 Tbs. vanilla extract Cinnamon and nutmeg to taste 3 Tbs. skim milk Powdered sugar
Pre-heat oven to 375 degrees. Mix egg substitute, vanilla and sugars in a large bowl. In another bowl, sift the flour, baking powder, cinnamon and nutmeg. Add to the wet ingredients slowly. Stirring from the middle mix well, add a little milk if it gets too thick. Fold in the nuts. Drop tsp. onto no-stick cookie sheet and flatten out a little for larger cookies, leave rounded for nut shaped cookies. Put in the oven for 10 to 12 minutes until lightly browned. Watch them carefully so the bottoms do not burn. Sprinkle with powdered sugar if desired and allow cooling.
