This delicious pie is packed full of strawberries and raspberries along with whipped cream and triple berry gelatin. It's berry good!
1 qt. Fresh strawberries; Washed and hulled, reserving 8 for garnish 1 Ready crust butter flavored pie crust 1 1/2 C. Fresh or frozen raspberries (with out sugar) 2 Tbs. Sugar 1 pkg. (0.3 oz.) Triple berry or raspberry flavored gelatin 1 C. Boiling water Whipped topping (optional)
Place prepared whole strawberries, hull side down, in the piecrust. Puree raspberries and sugar in blender or food processor. Press through a sieve to remove seeds. Set raspberry puree aside. Prepare gelatin according to package directions using 1 C. water. Chill until slightly thickened. Stir in raspberry puree into gelatin and pour over strawberries. Chill until firm. Garnish with a dollop of whipped topping and a fresh berry, if desired.
