Ingredients

8 red potatoes (more or less depending on how many you are feeding)
1 pkg. turkey bacon
2 C. shredded cheddar cheese (finely shredded)
1 bunch of green onions
Hellmann's mayonnaise (enough to coat)

Directions

Boil potatoes until fork tender and let cool. Be careful not to overcook or you will have mashed potato salad. While potatoes are boiling, fry or bake bacon until crisp. Put on paper towel to drain excess grease. Cut green onions (just the green part,) and put aside. After potatoes are cooked and cooled, cut into small cubes. In a large bowel, start with a few handfuls of the cubed potatoes. Put enough mayonnaise to coat. Take a few pieces of turkey bacon and crumble. Add some green onions and cheese. Put enough mayo to mix added ingredients with potatoes that are already in bowl. Repeat layers untill all potatoes are in bowl.
