The perfect dessert for the coconut and nut lover!
1 C. packed brown sugar 1 C. granulated sugar 1 C. butter or margarine, softened 1 tsp vanilla 1 egg 2 1/2 C. all purpose flour 1 tsp baking soda 1/2 tsp salt 2 C. flaked coconut 1 1/2 C. chopped cashews
Heat oven to 350 degrees. Beat sugars, butter, vanilla, and egg in a large bowl with electric mixer on medium speed or mix with a wooden spoon. Mix until creamy. Stir in flour, baking soda, and salt. Stir in the coconut and the cashews. Drop dough by 1/4 C.fuls about 3 inches apart onto ungreased large cookie sheets. Flatten slightly. Bake 12-16 minutes or until the edges are golden brown. Cool for 2 minutes, then remove from cookie sheets to wire racks to cool completely.
