Greek Pita Flatbread: You’ll never buy flatbread again after you try out this recipe. I make it by hand, but it’s also do-able in a bread machine!
Mediterranean Salad: This salad is my go-to for large parties, because it’s easy and delicious. It’s also great for people watching their weight, as it's very healthy! The dressing is also very light and won't pile on unnecessary calories.
Ribollita Italian Soup: This soup is basically a way to use up leftovers in the fridge. It always turns out delicious, even if the ingredients you use are incredibly random. Personally, I like to add cubes of fresh Italian brad to soak up the broth and make it more like a stew.
Falafel Burgers: This is a delicious and easy food hack I came up with to make falafel into burgers. The recipe is for falafel, but they're shaped into patties to be assembled into burgers. Trust me, you won't regret trying this out!
Tomato Paella: Isn’t paella one of the most simple and delicious things ever? I think so, and don’t be afraid of making it, either! If you make sure to use the right type of rice, it will come together nicely. Also, feel free to substitute chicken, beef, or more vegetables if you don’t like shrimp!
Moroccan Chicken Stew: Moroccan foods are some of my favorites, because of the way they incorporate sweet and savory flavors together. This stew tastes like a million bucks, while only costing a few. Plus, it’s really healthy!
Healthy Moussaka: Moussaka is a layered Greek casserole made with eggplant in place of pasta. It’s absolutely delicious, but can be quite heavy. This version lightens things up, so I’m a fan.
