A Pancake Recipe With Hints & Videos
Pancakes or flapjacks remind us of lumberjacks and hearty meals. Most people think they are a strictly American meal, but pancakes are found in many different cultures. We know them as crepes in France and griddle cakes in Scotland, but in any case they're made of flour, milk and eggs.
In the United States we generally think of pancakes as a breakfast dish but the popularity of The International House of Pancakes and other "breakfast" restaurants has brought the pancake into dinner territory. And why not, pancakes are a quick and easy meal to make and they cost very little to prepare. Topped with everything from maple syrup to chocolate chips, they've become a staple of the American diet.
This is a simple way to make fluffy, homemade pancakes for your whole family to enjoy at breakfast.
1 Tbs. sugar
2 C. flour
3 tsp. baking powder
2 dashes salt
2 C. milk
2 Tbs. vinegar
1 Tbs. melted butter
1 tsp. vanilla
2 eggs, beaten well
Mix together sugar, flour, baking powder and salt. Add milk and vinegar and mix well. Add butter, vanilla and eggs. Ladle batter onto hot skillet, and turn when top bubbles start popping. Remove from heat when evenly browned.
Batter keeps well in the refrigerator for several days.
