Pies
An easy chocolate pie to throw together whichever way you like.
Ingredients
1/3 C. packed cornstarch
1 C. sugar
3 C. milk
4 egg yolks
1 1/2 C. semi-sweet chocolate chips, or butterscotch chips, or peanut butter chips, or white chocolate chips, or any flavor you prefer
1 regular purchased graham cracker, or other cookie crust
Directions
Mix cornstarch and sugar. Stir in the milk and beat in egg yolks. Microwave on high for 3 minutes, stir, then microwave on high for 2 minutes, stir. Continue to microwave in 1-minute increments until thick. Remove from microwave and beat in the chocolate chips. Pour into the crust of your choice, refrigerate until cool, and cut and top with cool whip or whatever whipped topping you prefer.

Cakes
This cake is a treat on its own, but it also makes a great base for fresh berries or other favorite toppings.
Ingredients
1 C. cake flour
1 1/2 C. sugar
1 3/4 C. egg whites
3/4 tsp. salt
1 1/2 tsp. cream of tartar
1 tsp. vanilla
Directions
Sift flour and 3/4 C. of sugar 4 times. Beat egg whites with salt until stiff. Add cream of tartar. Beat again. Add remaining sugar, 1 Tbs. at a time, fold in thoroughly. Add vanilla. Sift or spoon flour mixture over top a small amount at a time, fold in lightly. Pour into ungreased angel food cake pan. Bake at 325 degrees for 1 hour.

Puddings
This bread pudding is a snap to prepare and simply delicious.
Ingredients
6 slices day-old bread, cut into 1/2 inch cubes
1 C. hot water
1 C. brown sugar
4 eggs, lightly beaten
2 C. warm milk
1/2 C. sugar
1/2 tsp. vanilla extract
1/2 tsp. ground cinnamon
1/8 tsp. salt
Directions
Place bread in greased 2-qt. baking dish. Combine water and brown sugar; pour over bread. Combine remaining ingredients; pour over bread. Bake at 350 degrees F for 50-60 minutes or until knife inserted in center comes out clean. Serve warm or cold.

Cookies
Chocolate Dipped Shortbread Cookies
Crunchy, decadent, delicious cookies dipped in chocolate!
Ingredients
1 C. butter or regular margarine, softened
3/4 C. powdered sugar
1 tsp. vanilla
2 1/2 C. all purpose flour
1 C. semisweet chocolate chips
2 tsp. shortening
Directions
Heat oven to 350 degrees. Mix butter, powdered sugar and vanilla in a large bowl using a wooden spoon. Stir in flour. If the dough is crumbly, mix in 1 to 2 Tbs. butter or regular margarine, softened. Roll dough 1/2 inch thick on lightly floured surface. Cut into small shapes by hand or use cookie cutters. Place 1/2 inch apart on ungreased cookie sheet. Bake 14 to 16 minutes or until set and bottoms are light golden brown. Immediately remove from cookie sheet to wire racks. Cool completely, about 30 minutes.
Place chocolate chips and shortening in small microwaveable bowl. Microwave uncovered on high for 1 to 1 1/2 minutes or until chocolate is melted. Stir until smooth. Dip half of each cooled cookie into melted chocolate. Place on waxed paper until chocolate is set.

Classic Chocolate Chip Cookies
Other Desserts
A rich Kahlua glaze tops off these exceptional brownies.
Ingredients
2 C. All-purpose flour
1/2 tsp. Baking powder
1/2 tsp. Salt
2/3 C. Unsalted butter
4 oz. chocolate chips
3 Eggs
1 1/2 C. Sugar
4 Tbs. Coffee liqueur
2 Tbs. Irish Crème liqueur
1 Tbs. Vodka
3/4-C. coarsely chopped walnuts (opt.)
Kahlua Glaze:
1 1/4 C. powdered sugar
3 Tbs. Coffee liqueur
Directions
Sift flour with baking powder and salt. In small saucepan, combine butter and chocolate. Set over low heat, just until chocolate is melted. Set aside. In bowl, beat in dry ingredients, chocolate mixture, coffee liqueur, Irish crème liqueur and vodka. Fold in nuts. Pour into 13x9-inch pan and bake at 350F about 25 minutes. Cool in pan. Spread with Kahlua Glaze. Decorate with whole coffee beans, if desired. Cut into squares and serve. Makes 24
