Garlic Shrimp Scampi

  • 6 Tbs. unsalted butter
  • 1/4 C. olive oil
  • 4 lg. garlic cloves, finely chopped
  • 20 lg. shrimp, peeled and deveined
  • salt
  • 3 Tbs. chopped parsley
  • 2 Tbs. lemon juice

In a large skillet, melt the butter with the olive oil over medium heat. Stir in garlic. Cook for 2 minutes, when garlic is golden. Turn the heat to medium-high. Add shrimp and salt to taste. Cook 1-2 minutes and turn the shrimp once. Cook until they are just pink, another 1-2 minutes. Stir in parsley and lemon juice. Cook for 1 more minute. Serve hot.

  • I modified the above recipe by using italian seasoning instead of parsley and adding sliced mushrooms, fresh red pepper slices and a tsp of Old Bay seasoning. Aboslutely delicious.
