If you have kids, you probably have over-ripe bananas sitting around your kitchen with nothing to do. So why not make banana bread with them? Known as a quick bread, banana bread is dense and flavorful. It uses baking powder instead of yeast as a leavening agent thereby making it "quicker" to make than traditional bread.
Although no one knows the actual origins of banana bread, it first appeared in Pilsbury's 1933 Balanced Recipes cookbook. It really came into fashion with the home baking craze of the 60's. And these days, when we try to stretch our food dollars, what better way to use old fruit than by making banana bread? You can eat it as a snack or breakfast item so you'll want to make plenty of loaves as it goes fast.

The Best Banana Bread
This is the most successful and versatile quick banana bread recipe I've found! You can also use chunky applesauce or a 15-oz. can of pumpkin for wonderful variations.
1/2 C. margarine, softened
1 C. white sugar
1 1/2 C. mashed banana
2 C. all-purpose flour
1 tsp. baking soda
Preheat oven to 350 degrees. Grease and flour one 9x5-inch pan. Cream margarine and sugar until smooth. Beat in eggs, then bananas. Add flour and soda, stirring just until combined. Pour into prepared pan and bake at 350 degrees for about 1 hour (or until toothpick comes out clean). Remove from pan and let cool, store in refrigerator or freeze.
