Beef...It's what's for dinner. At least that's what the National Beef Council wants you to believe. And next to chicken you're more likely to find beef on the table during dinner in America than any other meat. High in iron, eaten as part of a balanced meal, beef is an excellent source of protein and other vitamins. Beef is the most versatile of main dishes as you can get and has numerous cuts such as rounds, roast and steaks as well as cubed and ground.

Beef Cube Steak Recipes

Southern Cube Steaks
Add some carbonation to the dish along with some Cajun flavoring and you’ll have the whole table guessing about the secret ingredients you used.


4 (4 oz.) cube steaks
1/2 tsp. Cajun seasoning, or to taste
1/4 tsp. freshly ground black pepper
1 (12 fluid oz..) can or bottle lemon-lime carbonated soda
2 (10.75 oz..) cans condensed cream of mushroom soup
1 (1 oz..) envelope dry onion soup mix


Preheat the oven to 325 degrees F. Grease a 9x13 inch baking dish. Season the steaks on both sides with Cajun seasoning and black pepper. Place the steaks into the prepared baking dish. Pour the lemon- lime beverage over them. Combine the cream of mushroom soup and dry onion soup mix, and pour over the steaks. Bake, uncovered, for about 1 hour, or until meat reaches desired doneness. Do not open the oven door during the first hour of cooking. Serve steaks with gravy spooned over.

Beef Casserole Dishes

Hamburger Corn Casserole
This is an easy all-in-one meal to prepare that the family will love! I usually serve this with some form of bread (i.e. corn bread).


1 1/2 lb. ground beef
seasoning salt
1 med. onion
1 can cream of mushroom soup
1 can cream of chicken soup
4 oz. sour cream
1 can whole kernel corn
1 Tbs. pimientos
3 C. cooked egg noodles
4 slices bread, cubed
1 stick butter


Preheat oven to 400 degrees. Chop onion to desired size.  Add onion to ground beef. Season to taste with seasoning salt. Cook until brown. Drain excess fat. Add both cans of soup, corn and sour cream to ground beef and onion. Dice pimientos and add. Mix well. In another pan, boil noodles until done. Do not over cook. Drain and add noodles to hamburger mixture. Mix. Pour mixture into large casserole dish. Melt butter in small bowl. Add cubed bread slices. Lightly toss until all pieces are coated in butter. Sprinkle buttered bread cubes over top of casserole. Let brown in oven 15-20 minutes.

Easy Super Simple Sloppy Joes
Sometimes you don't want things to be complicated. Make some of these Sloppy Joes--only two ingredients!


1 lb. hamburger
1 can Campbell's Vegetable Soup

Brown hamburger and drain grease. Add soup and 1/4 to 1/2 can water and heat. Serve on slices of bread or as a sandwich.

Beef Roast Recipes

All American Roast Beef
This is your basic everyday eye round roast beef. Simply cooked to perfection. Serve it to family or company. The secret is in the time cooked.


3 lb. beef eye of round roast
1/2 tsp. kosher salt
1/2 tsp. garlic powder
1/4 tsp. freshly ground black pepper


Preheat oven to 375 degrees. If roast is untied, tie at 3 inch intervals with cotton twine. Place roast in pan, and season with salt, garlic powder, and pepper. Add more or less seasonings to taste. Roast in oven for 60 minutes (20 minutes per pound). Remove from oven, cover loosely with foil, and let rest for 15 to 20 minutes.

Beef Steak Recipes

Mexican Enchiladas
After dipping tortillas in red sauce and frying up in grease after stuffing with meat and potatoes they will have a red color that will tantalize and tingle your tongue with zesty flavor. The hotter the sauce the zestier the tingle. Enjoy.


2 lb. hamburger
5 dried chili pods
5 lg. potatoes
3 l. tomatoes
5 dried chili pods
5 jalapeno peppers
6-8 tomatillos (green tomatoes)
10 flour tortillas
1 C. oil

For guacamole and toppings:
1 onion
4 avocadoes
2 med. tomatoes
1 head lettuce
garlic salt
1 pkg. cheese
1 jar Picante sauce
1 can black olives
1 16-oz. container sour cream


Brown hamburger, drain off grease. While hamburger is browning over medium heat, bring large tomatoes, dried chili pods, jalapenos and tomatillos to boil in a pot. Let boil for 15 minutes. Blend in blender on liquefy. Pour into large bowl. 
Boil potatoes until fork easily goes in. Peel and quarter then dice up potatoes. In skillet, heat oil over low to low-medium heat. Dip tortilla into sauce then place flat in skillet. Put one large spoon full of hamburger and potatoes, about small handful of potatoes, into center of tortillas. Fold in half. Flip fry on each side about 30 seconds. When done, lift out of skillet to put on plate and drain off oil.

Guacamole: dice up onion and tomatoes. Peel and mash avocadoes. Stir in half cup of tomatoes and onion. Stir in garlic salt to taste. Place as many enchiladas on plate as desired and top with sour cream, guacamole, lettuce, black olives, diced onion, diced tomatoes, cheese, and salsa.

Beef Chili Recipes

Chili with Beans
A little bit of beer gives this crockpot chili an added flavor.


1 lb. mixed dry beans
1 lb. lean ground beef
1 lb. stew meat, cut into small chunks
1 large sweet onion, quartered
3 cloves garlic, minced
1 6 oz. can tomato paste
1 28 oz. can diced tomatoes
4 Tbs. chili powder
1 12 oz can lager beer (optional) you may use water or tomato juice instead
Hot sauce to taste


Place beans in a large stock pot and cover with water. Allow beans to soak for several hours. Meanwhile brown ground beef; stew meat, onion and garlic in a large skillet. Drain excess fat and set aside. Rinse and drain water from soaked beans and place in a large pot and cover with 6 C. of water. Cook over low to medium heat for about 1 hour. Place meat mixture in a crock-pot with cooked beans. Add tomato paste, diced tomatoes, chili powder, beer and hot sauce to the pot and simmer for several hours before serving. You can adjust the heat in the recipe with both the chili powder and the hot sauce. Some chili powders come with added ground hot pepper that can really spice up this dish. Other options are to use regular chili powder and supplement it with some ground hot pepper or to float a couple of dried whole hot peppers in the chili as it cooks.

Beef Stew Recipes

Basic Beef Stew
Customize this recipe to your personal taste. Ingredients like mushrooms, celery, Worcestershire sauce, red wine, or Tabasco sauce make welcome additions.


1 1/2 lb. beef chuck roast, medium dice
2 Tbs. oil
1/2 C. flour
Salt and pepper to taste
3 1/2 C. beef broth
1 medium onion, diced
3 carrots, peeled and diced
2 potatoes, diced
10 oz. tomatoes, diced


Heat the oil in a heavy pot (that has a lid). Season the flour with salt and pepper. Toss the beef in the flour. Add to the hot oil and cook until well browned (stir frequently). Add the remaining flour and cook for 3 minutes. Add the remaining ingredients. Bring to just under a boil. Reduce heat to a simmer. Cover partially. Simmer until the beef and vegetables are tender (about 1 1/2 - 2 hours).

Serves 4-6
