Leave it to the Japanese to come up with a kitchen appliance nobody knew they needed. But that's exactly what they did in 1986 by inventing the Bread Machine. By 1996 it had become the hottest new tool in the home-cooks arsenal as a wonderful way to make home-made bread without spending hours in the kitchen. Originally used mostly for kneading and baking bread, the odd shape of the loaf made it difficult for some people to get used to. However, major steps have been made in the last 5 years to make bread machines that create a regular sized loaf.

Part of the charm of these bread makers is that they have a timer which allows you to set the machine up at night or in the morning before work and come home to a fresh-baked loaf of bread. As well, once relegated to making your basic white, wheat and rye breads, today we have a whole host of delicious breads that can be made in a bread machine.

Bread Machine Recipes

Bread Machine Irish Soda Bread

This is an easy way to make traditional soda bread.


2 C. bread flour

1 C. whole-wheat flour

1/4 C. powdered buttermilk

2 Tbs. cornmeal

1 1/2 tsp. salt

1/2 tsp. baking soda

1 C. water

1 large egg

2 Tbs. molasses

1 Tbs. honey

1 3/4 tsp. bread machine yeast

3/4 C. currants

1 Tbs. caraway seeds

2 Tbs. butter


Preheat the oven to 375 degrees. Combine flours, buttermilk, cornmeal, salt, baking soda, water, egg, molasses, honey, butter, and yeast in the bread machine and process on the dough setting. Add the currants and caraway seeds just before the final kneading. Remove from the machine, punch down, and cover with the bread machine "pan." Let dough rest for 15 minutes. Line a baking sheet with parchment paper. Punch the dough down, and form it into an 8-inch circle, slightly flattened. Place the dough on the parchment paper, cover with plastic wrap, and let it rise until nearly doubled in bulk, about 1 hour. Remove the plastic wrap and cut a large X into the top of the dough with a sharp knife. Bake for 15 minutes on the middle oven rack, then reduce the oven temperature to 350F degrees and bake for an additional 15 minutes, or until brown and done through. Serve warm.

Some tips before you make your soda bread:

Sift the dry ingredients together several times to ensure that the soda is well distributed. Do not over handle the dough.
