Carrot Bran Muffins are a tasty and healthy start to girlawhirl’s day

With her crazy schedule, and, truth be told, her addiction to the snooze button, Girlawhirl is usually racing to get out of her apartment every morning and more often than not, that means breakfast is whatever she can grab on the way out the door. So she is always looking for something healthy that she can eat on the go. She’s found some great bars and smoothies that she can take with her but sometimes it’s nice to have something homemade to start the day…

So when she’s got a weekend with some free time to spend in the kitchen she usually whips up a batch of her favorite carrot bran muffins. The moist, dense muffins are perfect to have on hand when she wants a on-the-go breakfast treat that tastes great and makes a healthy start to her day. Here’s her recipe:

1½ cups white whole-wheat flour

½ tsp baking soda

¾ Tbsp baking powder

1½ tsp cinnamon

1 cup bran

2 eggs

¾ cup applesauce

¾ cup brown sugar

2 Tbsp organic maple syrup

1½ cups grated carrots

½ cup raisins

Preheat oven to 350.

Sift together flour, baking soda, baking powder and cinnamon. Add bran and set aside. Beat eggs, add applesauce, sugar and maple syrup. Mix in carrots, then flour mixture and raisins. Grease muffin tin or use paper muffin cups and fill each cup at least ¾ full with batter. Bake at 350 for 25 minutes. Makes 12 dense, delicious and healthy muffins.
