Cheap Quick And Easy Beef Dinner Recipes
This beef, cheese and noodle bake recipe makes a family-friendly casserole that is a great way to incorporate more vegetables into children's food. For creamiest results, do not over bake.
Ingredients
1 8-oz. pkg. small elbow macaroni
cooking spray
1 C. pre-chopped onion
1 C. pre-shredded carrot
2 tsp. bottled minced garlic
1 lb. lean ground sirloin
1 C. tomato sauce
1 tsp. kosher salt, divided
1/2 tsp. freshly ground black pepper
1 C. fat-free milk
2 tsp. all-purpose flour
1/8 tsp. ground nutmeg
1 1/2 C. 2% reduced-fat shredded sharp cheddar cheese, divided
Directions
Preheat oven to 350 degrees. Cook pasta according to the package directions, omitting salt and fat; drain. Lightly coat pasta with cooking spray. Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion and carrot, and sauté 4 minutes. Add garlic; sauté 1 minute. Add ground sirloin; cook 5 minutes or until browned, stirring to crumble.
Add tomato sauce, 1/2 teaspoon salt and pepper. Cook for 2 minutes or until most of liquid evaporates. Add pasta to beef mixture in pan, stirring to combine. Spoon pasta mixture into an 11x7-inch baking dish coated with cooking spray. Place milk, flour, nutmeg, and remaining 1/2 teaspoon salt in a medium saucepan; stir with a whisk until blended. Cook over medium heat 2 minutes or until thickened, stirring constantly with a whisk. Add 1 cup cheese, stirring until smooth. Pour cheese mixture over pasta mixture; stir. Top evenly with remaining 1/2 cup cheese. Bake at 350 degrees for 20 minutes or until lightly browned. Let stand 5 minutes before serving.

1 28 oz. jar spaghetti sauce
2 green bell pepper, seeded and cubed
8 oz. fresh mushrooms, sliced
1 onion, finely diced
2 Tbs. minced garlic
Directions
Put the chicken in the slow cooker. Top with the spaghetti sauce, green bell peppers, mushrooms, onion, and garlic. Cover, and cook on Low for 7 to 9 hours.

This easy casserole features layers of corn tortillas and a turkey mixture with corn, chili, olives, and several spices.
Ingredients
1 lb. uncooked ground turkey
2 cloves garlic, minced
1 (14 to 16 oz.) can cream-style corn
1 (10-1/2-oz.) can chili without beans
2 tsp. dried oregano, crushed
1/2 tsp. ground cumin
1/4 tsp. salt
8 (6-inch) corn tortillas
1 C. chicken broth or water
1 (2-1/4-oz.) can sliced pitted ripe olives, drained
1 C. shredded cheddar cheese (4 oz.)
Dairy sour cream (optional)
Thinly sliced green onion (optional)
Directions
In a large skillet cook turkey and garlic over medium heat view turkey is no longer pink.
Drain fat. Stir in corn, chili, oregano, cumin, and salt. Bring to boiling; reduce heat.
Cover and simmer for 5 minutes. Remove from heat. Set aside. Stack tortillas; cut into 6 wedges. Place wedges in a medium mixing bowl; add broth or water. Let stand for 1 minute.
Drain, reserving 1/4 C. liquid. Stir the reserved liquid and drained olives into the turkey mixture. In a 2-quart rectangular baking dish layer 2 C. of the turkey mixture and half of the tortillas; repeat layers. Top with remaining turkey mixture, spreading to cover tortillas. Bake, uncovered, in a 350 degree F. oven for 25 minutes or view heated through.
Top with cheese; bake for 2 minutes more. Let stand for 5 minutes before serving. Top each serving with sour cream and green onion, if desired.

Ingredients
2 C. pre-made tomato sauce
10 oz. shredded low fat mozzarella, divided in half
8 oz. low fat ricotta cheese
1 tsp. onion powder
3/4 C. grated cheese, divided
1 egg, beaten (or imitation), optional
1 lbs. cooked rotelli (or other short pasta you like)
1 Tbs. dried parsley
4 oz. shredded carrots
1 lg. zucchini, shredded and drained (place in colander so the juices can drip away)
8 oz. fresh mushrooms, sautéed with shallot in butter/oil to release liquids
Directions
Cook pasta in salted water and when done, cold shock and drain well. In a separate bowl, combine half the sauce, 6 oz. of the mozzarella, 1/2 cup grated cheese, parsley, all of the ricotta, onion powder and egg with cold pasta. Add vegetables and pasta and mix well. Add more sauce depending on how moist you like it (remember it will absorb sauce during heating).
Pour into casserole or tin pan. Sprinkle with remaining cheeses, dot with sauce and bake, covered, in pre-heated 350-degree oven for about 15–20 minutes. Be sure to spray foil with cooking spray first so the cheeses won't stick. Once heated through, remove foil and broil for about 2 minutes to get top cheeses brown and bubbly. Let set about 5 minutes before serving so the cheeses can set up.
