Clare Crespo's Funky Fourth Menu

Want to really impress your guests this 4th of July? Consider getting creative in the kitchen and taking a few notes from cookbook author and creator of the Yummy Fun Kooking Series, Clare Crespo. These holiday themed dishes will leave your guests feeling proud to be an American.

Recipe4Living asked Clare what she was serving her guests this 4th of July, and she was happy to share her exclusive menu!

First up: American Flag Pizza

 

What you need: 

  • 4 Tbsp. Shedd's Spread Country Crock® Spread, divided
  • 1 1/2 lbs. boneless, skinless chicken breasts, sliced
  • 5 cups roughly chopped assorted fresh vegetables, (such as peppers, onion, zucchini and mushrooms)
  • 1 jar (14 oz.) Ragu® Pizza Quick Sauce [or 2 cups pasta sauce]
  • 1 package (13.8 oz.) refrigerated pizza crust
  • 1/4 tsp. dried Italian seasoning
  • 1 cup shredded reduced fat mozzarella cheese

What to do: 

  1. Preheat oven to 425°.
  2. Melt 2 tablespoons Shedd's Spread Country Crock® Spread in large skillet over medium high heat. Add chicken and cook, turning once until lightly golden on both sides. Remove chicken from skillet; set aside. Add vegetables to skillet and cook until vegetables are tender. Return chicken and juices to skillet. Add Ragu® Pizza Quick Sauce; cover and cook until heated through and chicken is thoroughly cooked.\
  3. Turn chicken and vegetables into a 13 x 9-inch baking dish; cover with pizza crust. Melt remaining 2 tablespoons Spread and drizzle over crust; sprinkle with Italian seasoning and cheese.
  4. Bake 15 minutes or until golden brown and bubbly.
  5. Create a flag on top of the crust using sliced tomatoes, cooked spinach and sliced mozzarella cheese cut into star shapes with a star cookie cutter.

What you need: 

  • 1 medium red bell pepper, seeded
  • 3 medium baking potatoes, peeled and coarsely chopped
  • 2 Tbsp. Country Crock®
  • 2 Tbsp. reduced-fat sour cream
  • 1 clove garlic, minced
  • 1/4 tsp. salt
  • 1/4 tsp. ground black pepper

What to do: 

  1. Slice red pepper into extremely thin slices.
  2. Bring small saucepan of water to a boil.  Add pepper slices to water and boil until pliable, about 5 minutes; drain.
  3. In medium saucepan, cook the potatoes in salted water until tender, about 15 minutes. Drain the potatoes, reserving 2 tablespoons cooking water, then return potatoes to the saucepan. Add the Country Crock® Spread, sour cream, garlic, salt and pepper. Mash with a potato masher or a ricer until the ingredients are blended and the mixture is fluffy. Add the reserved water, 1 tablespoon at a time, until the potatoes are the desired consistency (keep them stiff enough to hold their shape).
  4. Using an ice cream scoop, mold a scoop of potatoes into a half sphere on a plate. Add pepper strips to resemble laces. Cut strips of pepper into smaller 1/4-inch pieces to make cross-stitches. Make additional baseballs with remaining potatoes and peppers.

What you need: 

  • One scoop (1/2 cup) of Breyers® Natural Strawberry Ice Cream
  • 5 yogurt covered pretzels
  • 5 raspberries
  • Blue sprinkles
  • 1/2 piece of green licorice

What to do: 

  1. Arrange all of your ingredients around a dish so they will be handy
  2. Scoop Breyers® Natural Strawberry Ice Cream in the center of the dish
  3. Arrange pretzels (double loop side out) around the scoop of Breyers® Natural Strawberry Ice Cream and place raspberries on ice cream
  4. Shake a few blue sprinkles on top of the ice cream
  5. Insert licorice piece in bottom of ice cream
  6. Serve immediately or pop in freezer if you are serving later.
