CRAZY for Coconut
You’ve been seeing them on grocery shelves in their oddly shaped box containers and you’re wondering, “What on earth does that taste like?” Well, I’m here to tell you that it is definitely okay to try that coconut water.
My favorite way to add coconut water to my diet is by simply pouring some over a fruit smoothie like this one: Tropical Fruit Smoothie, or simply drinking some straight from the container. The taste is as if water met milk and decided to go tropical. It has a very slight creamy flavor that is perfectly complimented with other tropical fruit juices.
There are more ways to enjoy coconut than just the water, however. For the adventurous few, perhaps you’d like to try this coconut crazy three-course meal. From appetizer to dessert your taste buds will be sent to tropical paradise.
- Coconut Beer-Battered Shrimp This is a fantastic appetizer that everyone loves, or serve over rice for a filling dinner.
- Halibut with Coconut-Red Curry Sauce Soak up the delectable sauce with a side of seasoned rice and bok choy.
- Copycat Bakers Square Coconut Cream Pie Bakers Square is famous for their pies so you know they're darn good. You really can't go wrong with any pie on their menu, but I'm Partial to the coconut cream pie.
Not only am I crazy for coconut, but I am also pining for pineapple this summer. Pineapple is one of my favorite flavors for the summer. There is something about the heat that starts my taste buds screaming for this tropical treat.

My final tropical escape favorite is none other than mango. Mango has become more and more common in past years and I could not be happier!

- Tremendous Mango Salsa A fresh spicy mango salsa to compliment a meat or enjoy alone with chips.
- Tropical Baked Chicken Chicken, ham, mango, and coconut are all featured in this recipe!
- Mango Sorbet If you don't have an ice cream maker, pour mixture into a 12x12- inch cake pan. Put in freeser. Stir every 15 minutes until slushy. Transfer to a plastic container and freeze for at least 6 hours.
