Winter is on the way, school has started and the lazy days of summer are a thing of the past. It's time to get serious about quick and easy meals that will fill you up and keep the whole family between school and practice. Enter cube steak, that staple of 60's and 70's kitchens that you thought was only a memory. This versatile cut of beef is top round or top sirloin pounded with a meat mallet or electric tenderizer.

Called "Minute Steak" in some parts of the country, these two cuts of meat are not always the same. Cube steak is always tenderized, and minute steak can be prepared with or without the tenderization process. The most common use for cube steak is when making "Chicken Fried Steak" but there are other delicious ways to prepare it.

Southern Cube Steaks

Add some carbonation to the dish along with some Cajun flavoring and you’ll have the whole table quessing about the secret ingredients you used.


4 (4 oz.) cube steaks

1/2 tsp. cajun seasoning, or to taste

1/4 tsp. freshly ground black pepper

1 (12 fluid oz..) can or bottle lemon-lime carbonated soda

2 (10.75 oz..) cans condensed cream of mushroom soup

1 (1 oz..) envelope dry onion soup mix


Preheat the oven to 325 degrees F. Grease a 9x13 inch baking dish. Season the steaks on both sides with Cajun seasoning and black pepper. Place the steaks into the prepared baking dish. Pour the lemon- lime beverage over them. Combine the cream of mushroom soup and dry onion soup mix, and pour over the steaks. Bake, uncovered, for about 1 hour, or until meat reaches desired doneness. Do not open the oven door during the first hour of cooking. Serve steaks with gravy spooned over.
