Easy Appetizer Recipes

Freakin Fantastic Feta Spread

This cool,creamy, snappy spread has a great zing, snap, bite to it that only Feta can bring. Your friends will be inpressed with this new simple dish and it's a sure crowd pleaser!


8 oz. Feta cheese

4 oz. sour cream

1 tsp. lemon juice

2 Tbs. fresh parsley

1 tsp. chopped garlic

2 Tbs. spring onion

1/4 tsp. cumin

1 roma tomato chopped fine for garnish on top


Put all ingredients except tomato in food processor, (blender works just as well). Blend until creamy. Put into serving bowl, top with tomatoes.

Serve with Kalamata olives, fresh figs, tomatoes and flat bread on the side. "The senses will go wild"!!! YUM! YUM! YUM!

Easy Soup Recipes

One Pot Meatball and Gnocchi Soup

The combination of the herbs and red wine make for such a bountiful and refreshing dish. Opting for the turkey products is a very figure-friendly choice and using the lemon juice and zest in the meatballs also brings such a light zing to your mouth.


2 Tbs. olive oil

4 pieces turkey bacon, diced

4 carrots, chopped

3 celery stalks (with leafy parts), chopped

1/2 onion, diced

6 cloves garlic, roasted

2 bay leaves

1 Tbs. fresh thyme, minced

1 Tbs. fresh rosemary, minced

1/4 C. red wine, preferably cabernet

1 lg. can diced tomatoes(with liquid)

1 can garbanzo beans, drained and rinsed

2 C. gnocchi, store-bought or hand-made

4 C. chicken broth

salt and pepper, to taste

1/4 C. fresh parsley, minced

Meatball Recipe

1 1/2 lb. ground turkey

1 egg

salt and pepper, to taste

1/4 tsp. red pepper flake

1 Tbs. fresh rosemary, minced

1 Tbs. fresh thyme, minced

1/4 C. grated parmesan cheese

1 lemon, juiced and zested


Combine ingredients for the meatball mixture and set aside. Heat oil in a large dutch oven over medium heat and add the bacon. Cook until crisp, about 5-7 minutes. Remove bacon and drain on paper towel, set aside. Next add the carrots, celery, onion, roasted garlic, bay leaves, fresh thyme and rosemary and let cook another 5-7 minutes.

Deglaze pan with red wine and let cook for 1 minute before adding the canned tomatoes, garbanzo beans, broth, salt and pepper. Bring to a boil, reduce heat to a simmer and begin forming meatballs and dropping them into the soup. Also add the gnocchi and let simmer for 7-10 minutes, until both meatballs and gnocchi are floating to the top. Return bacon to the soup and garnish with fresh parsley just before serving.

Simple Chicken Pot Pie

If you have a tube of refrigerated biscuits in the fridge, you can accomplish many culinary works.


1 can cream of chicken soup

1 C. milk

1/2 tsp. dried thyme

2 C. cubed, cooked chicken

2 C. frozen mixed vegetables

12-count pkg. refrigerated biscuits


In an 8-inch square baking dish, mix soup, milk and thyme. Stir in chicken and mixed vegetables. Bake at 375 degrees until hot. Top with biscuits and bake as directed for biscuits until golden.

Quick & Easy Old Fashioned Cheesy Au Gratin Potatoes

This is a creamy and cheesy side dish that's so quick and easy to prepare. These potatoes go great with chicken, pork, ham or beef.


4 C. yukon gold potatoes, thinly sliced

2 C. Velveeta, cubed

1 stick butter, cubed

4 Tbs. flour

2 tsp. kosher salt

3 tsp. freshly ground black pepper

2 C. Half & Half

4 C. cheddar cheese


Preheat oven to 375 degrees. In a greased baking dish, layer bottom with potatoes. Equally layer all the remaining ingredients. Pour half and half over the layers. Cover. Bake for 35-40 minutes or until potatoes are fork tender and sauce is thickened. Increase oven temperature to 400 degrees. Remove cover and sprinkle top of potatoes with grated cheddar. Return to oven and bake until cheese is golden brown.

Hint: Sprinkle flour, salt and pepper between layers.

These no-bake cookies feature cocoa, peanut butter, and oats.


2 C. sugar

1/2 C. cocoa

1/2 C. milk

1 stick margarine

1/2 C. peanut butter

1 tsp vanilla

3 C. oats


Mix sugar, cocoa, milk and margarine. Melt over medium heat and bring to a boil. Boil for 90 seconds (do NOT overcook!) Remove from heat, and add peanut butter, vanilla and oats. Mix well and drop onto wax paper to cool.
