Hawaiian chicken gets its name from a convergence of two cultures found in Hawaii. The native Polynesian culture which cooked with the fruits available to them such as pineapple and the Chinese which introduced soy sauce and chicken.  Although not technically a Hawaiian staple at a luau, the use of both these ingredients are staples of any Hawaiian Chicken Recipe. And, since it's rarely made with starches, Hawaiian Chicken is a low-fat and healthy meal.

Hawaiian Chicken

Add the sweet taste of pineapple and mandarin oranges to your chicken.


2 lb. skinless boneless chicken breast halves -- (2 to 3 lbs)

1 can (16-oz) pineapple chunks, drained

1 can (15 oz) mandarin oranges, drained

1/4 C. cornstarch

1/4 C. brown sugar, packed

2 Tbs. lemon juice

1/4 tsp. salt

1/4 tsp. ground (or finely chopped) ginger


Combine all ingredients in the crock. Stir well. Cover and cook on Low for 4-5 hours or High for 2-3 hours.
