One of the most well known dishes of the Swiss fondue tradition, cheese fondue is a communal cheese sauce made for dipping bites of bread cubes, fruit, and other dippables. Traditionally made from Swiss cheeses or gruyere, the cheese fondue has since taken many forms from cheddar cheese fondue to even gouda (as you'll see in Wolfgang Puck's Gouda Cheese Fondue recipe above).
1. Adding alcohol to a cheese fondue prevents the cheese from curdling when heated up.
