So, you want your cake to look like they do in the store. What do they do differently? Here are some tips to get you started. Practice makes perfect so don’t get frustrated your first attempt. The easiest way to frost a cake is to do so while it is still in the 9” x 12” pan. Though frosting a cake with 2 or more layers takes a little more patience and practice, you can do it.
You will need the following items.
1 fully baked cake or cake layers, cooled at least 3-4 hours
1 best icing spatula 1 pastry brush
Frosting (enough to cover your cake)
Directions for frosting a 2 layer cake:
1. Let the cake cool, uncovered, for 3-4 hours (or overnight). If it is frozen, let it warm to room temperature.
2. Slice off thin layer, if top of cake is domed.
3. Use a pastry brush to clean off loose crumbs.
4. Icing can also act as mortar between two layers or if a piece of cake breaks off. Be sure to brush off all loose crumbs.
5. To anchor the cake or keep it from sliding off secure the cake with a little frosting onto the serving platter.
6. Put parchment around the cake on the bottom so you can pull off when you are done. Keeps the cake plate neat.
7. Place the first layer on the plate, topside down. If the cake is still too domed cut off some more of the cake to make it flatter.
8. Spread 1/2 cup of frosting to the edges of the first layer. This is where you can add filling too. Usually works best if you frost the cake and put the filling between the frosted parts. Fresh sliced fruit works but you can use a can of pie filling too.9
9. Place the second cake layer on top of the first layer, right side up.
10. Frost the top and then the sides of the cake. Never drag the frosting over the cake, lightly spread it.
11. For a smooth finish, let the cake set for an hour, then re-smooth the cake with your spatula.
12. Add fresh fruit or flowers to the cake.
