How to Make Quinoa Mini Muffins

I tend to stay away from eating foods I can't pronounce, and quinoa used to be one of them. For the record, it's pronounced "keen-wah" and this thousand-year-old grain is super healthy.

If you can cook rice, you can cook quinoa. The process is identical. I only recently started eating quinoa after reading about it everywhere.

Quinoa can be used in stify-frys, salads, pancakes, desserts and even muffins. This recipe makes 12 mini muffins. I eat them with fruit and yogurt for breakfast and also bring a bag of them to snack on at work.

When my stomach starts growling and it's not quite lunchtime I can count on these filling muffins to hold me over.

Ingredients:

  • 1 C. quinoa, cooked
  • 1/2 C. mozzarella, shredded
  • 2 egg whites
  • 1/2 clove garlic, minced
  • 1 tsp. salt
  • 1/3 C. spinach leaves, chopped

Directions:

Preheat your oven to 350 degrees and spray a mini muffin tin with cooking spray.

Cook the quinoa.

Mix the quinoa with the cheese.

Add the egg whites, garlic, salt, and spinach leaves.

Spoon the mixture into mini muffin tins. Fill to the top.

Bake for 20 minutes. Let cool before serving.
