Incredible Edibles: Broccoli
Broccoli is usually known for two things: Making our children weep at the dinner table (Unless you have children like mine and the vegetable is doused in cheese) and being known as a "super food".
But do you have any idea how super broccoli really is?
Broccoli is a vegetable high in vitamin C and dietary fiber, but research has shown that it also contains some incredible anti-cancer components!
Come on now... doesn't that make you want to grab a big bowl right now?
It contains a compound known as glucoraphanin which is processed by chewing into sulforaphane, an anti-cancer compound. These two compounds mix and react to create broccoli's incredible super power.

Broccoli can also fight off cancer cells as it contains indole-3-carbinol, a chemical known for repairing cell DNA.
This green vegetable our kids love to hate is also great for weight loss and digestive health! The best way to munch on it is raw, in order to get all those fabulous nutrients, but steaming and stir-frying it works as well. When boiling, broccoli has been known to lose more of its nutrients, so be careful about how long you leave it in the water! Try microwaving it instead!
