With today's busy schedules sometimes you feel completely overwhelmed with what to make for dinner. That's where leftovers come in. Chicken is an especially great leftover ingredient as you can cook a large amount at one time and then refrigerate or freeze it until you need it for another dish. It is also more economical to make your own chicken than it is to buy the canned or frozen cubes and chunks.


Leftover chicken is great in casseroles, pot pies, tacos, chicken salad and more. Plus the final product is packed with vitamins and minerals and easy to make as the main ingredient is right at hand.

Leftover Chicken Recipes

Casseroles are a great way to use leftover chicken in a recipe. Try Creamy Chicken Casserole for a quick and easy lunch.

Ingredients

Casserole:

2 C. cooked chicken, cubed

9 oz. frozen mixed vegetables, slightly thawed

2 C. elbow macaroni, uncooked

1 C. American cheese, shredded

10 3/4 oz. condensed cream of celery soup

2 C. water

Topping:

1/2 C. plain bread crumbs

2 Tbs. margarine or butter, melted

Directions

In large bowl, combine all casserole ingredients; mix well. Pour into ungreased 8" square (1 1/2 qt.) baking dish. Cover tightly; refrigerate 8 hours. Heat oven to 350 degrees. In small bowl, combine topping ingredients; mix well. Stir casserole; sprinkle with topping of 1/2-C. bread crumbs and 2 Tbs. margarine or butter, melted. Bake for 45 to 55 minutes or until bubbly and golden brown.
