If your dough breaks as you roll out your pasta, it's probably because your dough is too dry. Be sure to keep the fresh dough covered with a moist towel after forming the dough, and between the different stages of kneading and rolling to form the pasta. Once the pasta has been cut into its desired shape, it is recommended to dry the pasta by hanging and dusting with semolina flour.
